I was recently shopping at Michaels for new Christmas Tree Ornaments and Holiday decorations feeling very jolly when I noticed some of the fellow shopper did not feel the same hustling through the isles when one shopper bumped into me knocking all of my items onto the ground. This particular shopper did not even noticed the mess they just created, however, when they glanced over at me, I offered them a warm smile and the gave me one in return. I saw this particular shopper again in the checkout line, where they offered for me to go before them. To show my gratitude, I offered the shopper my store coupon, to my surprise this brought a HUGE grin to their face and tear in their eye. that is perfect for an on-the-go breakfast/snack or holiday party dessert!
Gluten-Free Banana Apple Bread (Vegan, Dairy Free)
2 Ripe Bananas
1 Apple, peeled & diced
1 1/4 Cups Oat Flour
1/2 Cup Almond Meal Flour
1/2 cup Applesauce (Used Raspberry Applesauce)
1 Tbsp Raw Honey
10-20 Drops of Liquid Stevia
1 Tsp baking soda
1 Tsp salt
Preheat oven to 350°F. Lightly spray a 9" loaf pan
In a medium sized bowl, mash the bananas
Add the rest of the ingredients & mix. Pour into greased pan.
Bake for 45 minutes or until a toothpick inserted in the middle comes out dry.
Cool in pan for 15 minutes & then transfer to a cooling rack. Enjoy!

Coming from generations of traditional Italian cooking, my family Holiday dinners are a combination of traditional Italian favorites, turkey with cranberry sauce and stuffing; so I decided to put a healthy exotic twist to the All-American Stuffing! The result is an AMAZING Cranberry-Apple Wild Rice Stuffing Recipe that can be tailored to dietary restrictions or allergies like vegan, dairy-free, gluten free, nut-free or to your desired taste palette. Wild rice adds a wonderful texture to this stuffing while the slight sweetness of the dried cranberries and apples lends a delicious flavor. This is a perfect stuffing for winter squashes making a dazzling holiday main dish. Happy Thanksgiving from our family to yours.....ENJOY!Ingredients:2 1/2 cups low-sodium vegetable broth, or 2 1/2 cups water with 1 vegetable bouillon cube2/3 cup Raw Wild Rice or 1/2 Package of Trader Joe's Cooked Wild Rice1 1/2 tablespoons Olive Oil1 Medium White Onion, chopped1 Large Celery Stalk, diced2 Medium Apples, cored & diced4 Cups finely diced Cornbread or Whole Grain Bread (Use Gluten-Free Options like our Gluten-Free Zucchini Cornbread Recipe minus the zucchini or Gluten-Free breads)1/3 Cup Dried Cranberries1/4 Cup finely chopped Pecans or Walnuts2 tsp Salt-Free Seasoning (like Spike or Mrs. Dash)1/4-1/2 tsp Dried Thyme, to tasteSalt & freshly Ground Pepper, to taste1/2 Cup Apple Juice or Apple Cider (Organic, Unfiltered or All-Natural)Directions:
**Bonus Quick Tips:
- Bring the broth to a simmer in a small saucepan. Stir in the wild rice, then cover and simmer gently until the water is absorbed, about 35 minutes. (**If using cooked wild rice, omit this step)
- Preheat the oven to 375 degrees.
- Heat the olive oil in a medium-sized skillet. Add the onion, sauté until translucent. Add the celery and sauté over medium heat until both are golden.
- Combine the onion-celery mixture with the cooked wild rice and all the remaining ingredients except the apple juice in a mixing bowl. Stir well to combine. Drizzle the apple juice in slowly, stirring until mixture is evenly moistened.
- Transfer the mixture to a lightly oiled or buttered, large shallow baking dish. Bake for 30 to 35 minutes, or until the top begins to get slightly crusty. (**Cover with foil if desired)
- Whirl slices & chunks of whole-grain bread in a food processor until fine. This is a good way to use up ends and slightly dated pieces of bread.
- Plump dried cranberries in the cider by warming them both in a saucepan or in the microwave and letting them stand for about 5 minutes. Drain the cranberries, reserving them and the cider separately.
Makes 8 serving with 178 Calories per serving

Tis the season we start craving warm comfort foods like stews, soups and chili so why not enjoy a healthier version of traditional side-dish favorites like cornbread! This cornbread recipe is very versatile meaning you can substitute any flour or vegetable of your choosing by simply following the recipe below.
1/4 Cup Brown Rice Flour
1/2 Cup Buckwheat Flour
2/3 Cup Yellow Cornmeal
1/2 Tsp Salt
2 Tsp Baking Powder
4 Tbsp Apple Sauce
10-20 Drops of Liquid Stevia (Add 1 Tbsp of Honey for Sweeter Taste)
1/2 Cup Egg Whites or 1 Full Egg & 1 Egg White
2/3 Cup Fat-Free Cottage Cheese
1/2 Cup Olive Oil (Used Red Pepper Infused for Flavor)
1 Cup Grated Zucchini
1/2 Red Bell Pepper Chopped
Heat oven to 400 Degrees. Mix all ingredients in a large bowl except broccoli and red peppers. Stir well. Fold broccoli into batter mix. Spray a loaf pan with nonstick cooking spray. Pour batter into loaf pan, top off with chopped red bell pepper. Bake for 30-40 minutes. Let cool for 10 mins before serving. Store in refrigerator. Makes 12 Servings. Enjoy!

1 Cup Coconut Flour
1/4 Cup Ground Flax Meal
1/2 Cup Dry
1/4 cup Protein Powder of choice (I used Metabolic Nutrition Chocolate Cake)
1/2 Tsp Baking Soda
1/2 Tsp Baking Powder
1 Tsp Cinnamon
2 Whole Eggs
2 Egg Whites
2 Tbsp Melted Coconut Oil
1 Medium Banana Mashed
1/4 Cup Unsweetened Apple Sauce
1/4-1/2 Cup Unsweetened Chocolate Almond Milk (used as needed to moisten mixture)
2 Tsp of Vanilla Extract
10-20 Drops of Liquid Stevia (I used the Chocolate Flavor)♥ DIRECTIONS ♥
Preheat oven to 350
Mix ALL Dry Ingredients in Medium Bowl - set aside
Mix ALL Wet Ingredients in Large Bowl
Using an Electric Mixer, slowly add Dry Ingredients Mixture
Fold in 1/2-3/4 bag Chocolate Chips into Mixture
Grease Cookie Sheet (use coconut oil or vegan butter)
Roll Batter into 1 inch balls & flatten with palm, place on cookie sheet
Bake for 15 minutes. Let cool completely & Enjoy!

Well, I would have to say from my own experience with meal prepping/planning it is quiet easy and there are many benefits to this process. From as far back as I can remember I have always been a natural born healthy eater, however, when we are hungry we tend to settle for convenience rather than healthy options.....and yes I have fallen victim to this habit in my our daily life. That was until I decided to compete in my very 1st NPC Bikini Competition! When it came to training my body and building muscle, I was a pro, however, I need guidance when it came to proper nutrition for an athlete so I sought the advice of my dear friend Annie Parker
, MS Nutritionist, Trainer and Bikini Competitor Coach. Annie customized a meal plan that was right for my body with portion sizes....yes I said portion sizes. So I quickly got to work with cooking, measuring and scheduled feedings. Now you may be asking yourself why I am telling you all of this...well, as a Health & Lifestyle Coach I know the logistics to healthy living, however, this experience taught me that there are many benefits to meal prepping/planning that any person regardless of age, gender, athletic ability, weight-loss or management goals making an big impact on ones health.
- Saves $$ ~ With Meal Prepping/Planning you know exactly what foods you will need to buy creating a check list when you are at the store eliminating impulse buys. Plus, you can incorporate the use of coupons and weekly specials. Fall is in the air which means it's "sweet treat" baking season....my FAVORITE time of year! Since Halloween is right around the corner, I decided to whip up something sweet & chocolatey using pumpkin, so ENJOY this yummy & healthy recipe:
PUMPKIN OAT BARS WITH CHOCOLATE CHIPS
Perfect for a party dessert dish, breakfast on the go, snack time or simply any occasion.
♥ INGREDIENTS ♥
2 1/2 cups of Organic Oat Flour
2 tsp aluminum free Baking Powder
1/2 tsp Baking Soda
1/4 tsp Sea Salt
1 1/2 tsp Cinnamon
1/8 tsp nutmeg
pinch of Ground Cloves
12 oz or 1 can organic pumpkin (not pumpkin pie mix)(Trader Joe's has a great one)
2 teaspoons pure Vanilla Extract
1/2 cup unsweetened Applesauce
1/4 cup Honey
10 drops of Liquid Stevia
1 tablespoon grape seed oil or coconut oil
1 bag of Organic and/or Vegan Chocolate
♥ DIRECTIONS ♥
Preheat oven to 350
Mix ALL Dry Ingredients in Medium Bowl - set aside
Mix ALL Wet Ingredients in Large Bowl - Mix for 1-2 mins until smooth & creamy
Using an Electric Mixer, slowly add 1/2 cup of Dry Ingredients at a time
Fold in 1/2-3/4 bag Chocolate Chips into Mixture
Pour Batter in a greased (use coconut oil or vegan butter) 8x11 inch baking pan. Level out batter & top with remaining chocolate chips. Bake 20-25 minutes. Let cool completely. Cut into individual serving sizes. Enjoy!
Life can get hectic sometimes and before we know it the hours in our day fly by so quickly who really has the time to cook healthy meals from scratch? I have learned over the years that owning a Crock-Pot slow cooker is the solution. I love to experiment with recipes so here is a GREAT chicken recipe the whole family will enjoy and you can even store the leftovers in the fridge or freezer.
SPICY SHREDDED CHICKEN
**Perfect for Tacos, Lettuce Cups, Pizza, Sandwich Wraps, Salads & More!
♥ INGREDIENTS ♥
4-6 Chicken Breast Cleaned & Cut in Half
1 Can of Muir Diced Tomatoes with Green Chilies
1/2 Cup Water
1 Tbsp Fresh Chopped Garlic
1-2 Tbsp Sriracha
1 Tbsp Cumin
1 Tbsp Mrs Dash Salt-Free Seasonings
Dash of Fresh Ground Black Pepper
OPTIONAL: Fresh Diced Peppers & Onion
♥ DIRECTIONS ♥
Blend Canned Tomatoes, Water, Garlic, Hot Sauce & Seasoning briefly
Add Chicken Slices to Slow Cooker
Pour Tomato Mixture over top of Chicken
Cook on LOW for 6-8 Hours (I prefer to let this cook over night)
Use a Fork to Shred the Chicken either in the Slow Cooker or on a Cutting Board
Add Chicken back into Salsa Mixture
Serve as desired & ENJOY!
