
INGREDIENTS:
1lb Lean Ground Turkey
3-4 Celery Stalks (Chopped)
1/2 White Onion (Chopped)
1/2 Red Pepper (Chopped)
2 Eggs
3/4 Cup Salsa (I used Trader Joes Roasted Garlic)
1 Tbsp Ground Mustard
2 Tbsp Spicy Dijon Mustard
2 Tbsp Worcestershire Sauce
1/4 Cup Ground Flax Seed
3/4 Cup Wheat Germ (Gluten Allergy - Sub Gluten-Free Bread Crumbs)
Season as Desired (Salt-Free Seasoning Blend, Fresh Ground Black Pepper, Cayenne Pepper, Cumin)
DIRECTIONS:
Pre-Heat Oven to 350 Degrees
Mix ALL ingredients in large mixing bowl
Line baking sheet or pan (8x11 size) with foil and spray with Pam or Cooking Spray of choice.
Form 2 Loaves with Meat Mixture, place onto foil lined baking sheet. I prefer to cook my meatloaf this way so the excess grease/fat cooks out. Once you have your 2 loaves formed, top with remaining salsa. Place in oven, bake for 40-45 minutes & ENJOY!
